  1. 4 tablespoons 60ml Olive oil

  2. 1 lb 454g / 16oz Loukanika sausage - large diced

  3. 1 Yellow onion - chopped

  4. 3 Garlic cloves - crushed Chopped fresh oregano - to taste

  5. 1/2 lb 227g / 8oz Plum tomatoes - chopped

  6. 4 Eggs - beaten

  7. 2 tablespoons 30ml Chopped scallions Salt - to taste Freshly-ground black pepper - to taste

  1. Recipe Instructions Heat the olive oil, on medium-high heat, in a non-stick pan, add the sausage and saute quickly to render juices. Add the chopped onions and cook until translucent. Once the onions are cooked, add garlic, oregano and tomatoes and cook slowly for 5 minutes. Add the beaten eggs to the pan, and toss in scallions and begin folding together slowly with a rubber spatula. When well blended, season with salt and pepper and serve hot. This recipe yields 4 servings.
