  1. 1 1/3 cups all purpose flour

  2. 3 teaspoons baking powder

  3. 1/2 teaspoon salt

  4. 3 cups bran flakes

  5. 1 cup butter, softened

  6. 1 cup granulated sugar

  7. 1/2 cup packed brown sugar

  8. 2 large eggs

  9. 1 teaspoon vanilla extract

  10. 1/2 cup chopped nuts

  11. 1 1/2 cups sweetened flaked coconut

  1. Preheat oven to 375 °F (190°C). Sift together flour, baking powder and salt in a small bowl. Stir in bran flakes. Cream butter, sugar and brown sugar in a large bowl. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Gradually add flour mixture and stir until well combined. Stir in coconut and nuts. Drop by the tablespoon 2 inches apart onto baking sheets. Bake for 12 minutes or until light golden brown around the edges. Cool on a wire rack.
