  2. ITALIAN: RISOTTO WITH CRABMEAT AND BASIL

  8. 1 sm Onion, minced

  9. 1 1/2 c Arborio rice* or medium-

  10. Grain

  11. 5 c Chicken stock or canned

  12. Broth

  13. 1/2 c Whipping cream

  14. 3 1/2 oz Fresh goat cheese

  15. Montrachet)

  16. 8 oz Crabmeat

  17. 1/3 c Chopped fresh basil or Teaspoon dried, crumbled

  18. Melt butter in heavy large saucepan over medium heat.

  19. Add minced onion and saute' until translucent, about 3

  20. 1 minute. Add

  21. 1 cup

  22. chicken stock to rice, reduce heat and simmer until

  23. liquid is absorbed, stirring frequently. Continue

  24. adding enough of remaining chicken stock 1 cup at a

  25. time until rice is just tender but still firm to bite,

  26. stirring frequently and allowing each addition to be

  27. absorbed before adding next, about 20 minutes. Add

  28. whipping cream and simmer 2 minutes. Mix in goat

  29. cheese, then crabmeat and chopped basil. Season

  30. risotto to taste with salt and pepper.
