  2. PEARS BAKED IN HONEY

  7. 12 Pears

  8. 1 lb Honey

  9. 1 Lemon, juice

  10. 20 fl Water (plus)

  11. Preheat oven to 325 F (160 C).

  12. Peel halve and core the pears, keeping them in water

  13. which you have acidulated with half the lemon juice.

  14. Dissolve the honey in the water, add the other half of

  15. the lemon juice and bring to the boil. Transfer to an

  16. oven proof dish or pan large enough to keep the pear

  17. halves in one layer.

  18. Add the drained pear halves and bring back to the

  19. boil. Immediately transfer the dish to the oven and poach until the pears are really tender. Remove with

  20. slotted spoon, boil down cooking liquor to a syrup and pour over the pears. Leave to cool then chill. Serve
