  1. 2 cups water

  2. 1 cup quinoa, rinsed

  3. 1 small onion, chopped

  4. 1 tablespoon olive oil

  5. 1-1/2 cups frozen peas

  6. 1/2 teaspoon salt

  7. 1/4 teaspoon pepper

  8. 2 tablespoons chopped walnuts

  1. In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork. Meanwhile, in a small skillet, saute onion in oil until tender. Stir into cooked quinoa. Add the peas, salt and pepper; heat through. Sprinkle with walnuts. Yield: 6 servings.
