  1. --SMOKY RED-ONION SALSA;--

  2. 1 sm Red onion, cut into 1 Tomato, cut into 4 slices

  3. 6 tb Fresh lime juice

  4. 1/4 c Chopped fresh cilantro

  5. 4 ds Red pepper sauce (up to 10)

  6. Salt and cracked black -pepper

  7. --SANDWICH--

  8. 3 tb Chili powder

  9. 1 tb Cumin

  10. 1 tb Cracked black pepper

  11. 4 Boneless, skinless

  12. -chicken-breast halves (1 -1/4 lb.) Salt 8 sl Sourdough bread,

  13. 1/2-inch-thick

  14. 1/4 c Mayonnaise

  15. Assorted baby lettuces

  16. 1. Heat grill.

  17. 2. Make Smoky Red-Onion Salsa: Grill onion and tomato slices 2 minutes per

  18. side. Chop coarsely and transfer to bowl. Stir in remaining ingredients. Makes 2 cups.

  19. 3. Combine chili powder, cumin and pepper in small bowl. Rub all over

  20. chicken. Sprinkle with salt.

  21. 4. Grill chicken over medium-hot heat until cooked through, 4 to 5 minutes

  22. 30 to 60 seconds per side.

  23. 5. Top 4 bread slices with mayonnaise, lettuces, chicken, then salsa. Top

  24. with remaining bread.
