  1. 1 1/2 cups rice, washed

  2. 3 cups milk, scalded

  3. 1 lemon, rind only, grated

  4. 1/3 cup sugar

  5. 1/2 teaspoon nutmeg

  6. 1/2 cup cream, whipped

  1. Instructions Scald the milk first and drop into it spoonful by spoonful the rice. Add the lemon rind and nutmeg. Let cook slowly for about 40 minutes. Add the sugar. Pour into glasses and let cool. Serve with whipped cream on top.
