  1. 2 teaspoons cumin

  2. 1 large spanish onion, chopped

  3. 1 tsp cinnamon

  4. 1/4 tsp smoked paprika or cayenne pepper

  5. 4-5 cups low-sodium chicken or vegetable stock

  6. 2 cans (15 ounces) real pumpkin (NOT pie fillling)

  7. 1/2 cup apple sauce, unsweetened

  8. 1/4 tsp pepper

  9. 3 tbsp lime juice, optional

  10. thyme sprigs for garnish

  1. Heat oil in a large pot and cook onions until translucent - about five minutes.

  2. Add cinnamon, paprika, and cumin. Stir for 30 seconds or until fragrant (do not burn!).

  3. Add all remainng ingredients.

  4. Using a hand blender, carefully puree soup.

  5. Bring to a boil and simmer for 5 minutes.

  6. If using lime juice add just before serving.

  7. Garnish dishes with thyme sprigs.
