  1. 1/2 cup espresso

  2. 2 1/2 cups 2% low-fat milk

  3. 1/4 cup sugar

  4. 1 tablespoon pectin

  1. Combine espresso, milk, sugar and pectin in a pitcher or covered container.

  2. Stir or shake until sugar is dissolved.

  3. Chill and serve cold.

  4. NOTES : 5 To make the "Mocha" variety, add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.

  5. To fake espresso with a drip coffee maker and standard grind of coffee: 7 Use 1/3 cup ground coffee and 1 cup of water.

  6. Brew once then run coffee through machine again, same grounds.

  7. Makes about 1/2 cup fresh espresso to use in the above recipe. ?
