  1. 5 Dried mushrooms

  2. 1 c Hot water

  3. 4 tb Soy sauce

  4. 2 ts Sugar

  5. 1/2 ts Finely chopped garlic

  6. 4 ts Toasted sesame seeds

  7. 1 Chicken

  8. -breast,skinned,boned,bite

  9. -size pieces

  10. 2 oz Cellophane noodles

  11. 6 tb Vegetable oil

  12. 1 lg Onion,peeled and chopped

  13. 3 To 4 medium carrots,cut into -thin 2 inch strips

  14. 1 c Bean sprouts

  15. 1/2 c Fresh spinach,chopped

  16. 5 ts Sesame oil

  1. Chap Ch'ae Soak mushrooms in hot water for 20 minutes or until soft.

  2. Drain well and chop, discard stems.

  3. In medium bowl combine 2 tablespoons soy sauce,1 tsp sugar, garlic, 2 tsp sesame seeds, and chicken.

  4. Set aside Cook and drain noodles,and with a knife cut noodles into 3 inch length.

  5. In a fry pan or wok,heat 1 tab oil add:chicken and fry,stirring frequently until tender.

  6. Remove from heat and add chicken to noodles.

  7. Heat 1 tab oil again then add mushroom and cook until soft.

  8. Remove from pan and add to noodles.

  9. Repeat with remaining vegtables, cook each one separately.

  10. Add 2 tablespoons soy sauce 1 teaspoon sugar 5 teaspoons sesame oil 2 teaspoon sesame seeds to noodle mixture mix thoroughly.

  11. Serve warm or at room temperature with rice.
