  1. 5-Cup Salad

  2. 1 cup pineapple chunks, drained

  3. 1 cup mandarin oranges, drained

  4. 1 cup flaked coconut

  5. 1 cup small marshallows

  6. 1 cup sour cream

  7. Mix the sour cream with the coconut. Add the pineapple. Then stir

  8. in the marshmallows. Finally add the mandarin oranges and blend

  9. slowly. I add these last so that they aren't overmixed and break

  10. apart. It's best to make this several hours in advance so that

  11. the flavors have time to blend.

  12. Notes: I usually double this recipe as 1 regular can of pineapple

  13. 2 cups. 1 can of oranges is approximately

  14. 1 cup,

  15. so I get two. And I buy my sour cream in a 16 oz. container to

  16. have my 2 cups of sour cream. This eliminates alot of measuring.

  17. The colored marshmallows are festive during the holidays. I use

  18. the rabbit shaped ones at Easter.
