  2. 1 ct sour cream

  3. 2 tablespoons blue cheese -- crumbled

  4. 1/4 cup finely chopped onion

  5. 1/4 teaspoon salt

  6. fresh parsley --

  7. 2 pounds catfish fillets

  8. 1 cup fine crushed crackers

  9. 1/2 cup grated parmesan

  10. 1/4 cup sesame seeds

  11. 1/2 teaspoon salt

  12. 1/4 teaspoon pepper

  13. 1/2 cup butter -- melted

  1. Combine sour cream, blue cheese, onion and salt in a small mixing bowl. Stir to mix. Cover and refrigerate. Garnish with chopped parsley if desired. Makes 1 1/4 cups. Thaw fish according to package directions if frozen. Cut fillets into 1 inch cubes and set aside. Combine cracker crumbs, cheese, sesame seeds, salt and pepper in a small bowl and set aside. Dip fish cubes in butter. Roll in cracker crumbs. Put fish cubes, 1/2 inch apart, on a foil lined baking sheet (use another sheet if necessary). Bake, uncovered at 400 degrees for 20 minutes or until golden brown. Serve immediately with dip. Makes about 6 dozen appetizers.
