  7. 1 Lb Potatoes

  8. 2 Green Chiles -- Finely Chopped

  9. 1 Long

  10. Chopped 2 Med Onions -- Finely Chopped

  11. 2 Tomatoes -- Finely Chopped,(Opt)

  12. Salt -- To Taste

  13. 1/2 Tsp Ground Turmeric

  14. 1 C Water

  15. 1/2 C Green Peas -- Boiled, (Opt)

  16. 1 Sm Bunch Of Coriander -- Finely Chopped

  17. --For Tempering--

  18. 1 Tbsp Oil

  19. 1 Tsp Brown Mustard Seeds

  20. 1 Tsp Cumin Seeds

  21. 1 Tsp Black Gram Dal (Washed Urad Dal) -- Picked Over

  22. & Rinsed

  23. 1 Tsp Bengal Gram Dal (Channa Dal) -- Picked Over &

  24. Rinsed 1 Red Chili Pepper -- Halved

  25. 1/2 Tsp Asafoetida Powder

  26. A Few Curry Leaves

  27. Boil the potatoes in their jackets until cooked. Peel, mash and set

  28. aside.

  29. TEMPERING: Heat 1 tablespoon oil in a heavy saucepan. Add the mustard

  30. seeds, cumin seeds, black gram dal, Bengal gram dal, halved red chili,

  31. asafoetida powder, and a few curry leaves.

  32. When the mustard seeds splutter, add the finely chopped green chilies,

  33. ginger, onion and tomatoes (if used). Saute for 2-3 minutes.

  34. Add the salt to taste, ground turmeric, and 1 cup water. Cover the pan

  35. with a lid. Simmer for about 5 minutes, until the onions are well

  36. cooked. Add the mashed potatoes and boiled peas (if used). Cook for another 2 minutes, until thoroughly blended.

  37. Garnish with finely chopped coriander leaves. Serve hot with Masala

  38. Dosai or puris. - - - - - - - - - - - - - - - - -
