  1. 1 (28 ounce) jar sauerkraut , drained

  2. 3 stalks celery , sliced

  3. 1 medium onion , diced

  4. 1/2 bell pepper , diced (I like yellow)

  5. 1/2 cup pimiento , diced,drained

  6. 1 teaspoon oil (canola)

  7. 1/4 cup white vinegar

  8. 18 packets sugar substitute (equal)

  9. salt & pepper

  1. Combine first five ingredients in bowl.

  2. Mix oil vinegar and sugar substitute in small bowl, pour over sauerkraut and mix.

  3. Chill.
