  2. RIZI O GRATEN (RICE AU GRATIN)

  6. SPALDING

  7. 3 1/2 cups Chicken or beef broth

  8. 4 tablespoons Butter

  9. 1 1/2 cups Raw rice

  10. Salt & pepper to taste

  11. 1 1/2 cups Kefalotiri cheese -- grated

  12. 4 Eggs

  13. 1 cup Ham -- chopped

  14. 3 tablespoons Bread crumbs -- toasted

  15. Boil broth w/2 tb. of the butter. Add rice, stirring it so it doesn't stick. Add salt & pepper.

  16. Cover pot and simmer until liquid is absorbed (abt. 15 min.). Add 2/3 ofthe

  17. cheese, mix well, then remove from heat. Half cool. Beat egg lightly and add

  18. to rice. Add ham and mix in well with a fork. Butter a baking pan. Put rice in

  19. and spread evenly. Sprinkle with remaining cheese and then the bread crumbs. Melt the remaining butter and drizzle it over the top of the rice. Bake in

  20. 350 F. oven abt.

  21. 15 min., or until golden brown. Serves
