  2. 500 g 2 tablespoons 500 ml 1/4 teaspoon 1 teaspoon 2 tablespoons Batter

  3. 1 100 g 50 g 1 tablespoon 1 tablespoon 1/2 teaspoon 1/2 teaspoon 1 teaspoon Garnishing

  4. 1 sprig

  5. 1/4 Squid, cleaned

  6. Rice vinegar

  7. Water

  8. Cooking oil, for deep frying

  9. Mayonnaise

  10. Chili sauce

  11. Egg, well beaten

  12. Plain (all purpose) flour

  13. Tapioca flour

  14. Cold water

  15. Cooking oil

  16. Salt

  17. Ground white pepper

  18. Annatto seed oil

  19. Lettuce

  20. Cucumber, sliced

  1. Score squid tubes with criss-cross cutsthen cut into bite-sized pieces Bring vinegar and water to the boil.

  2. Blanch squid, then drain well.

  3. Marinate squid with pepper and salt.

  4. Combine batter ingredients.

  5. Heat oil for deep frying. Dip squid inbatter then deep fry in hot oil until golden brown.

  6. Serve with mayonnaise, chili sauce,lettuce and sliced cucumber.
