  1. Basic Macaroni and Cheese

  2. 1 lb. macaroni

  3. 1 to 2 lbs. Cheddar, Monterey Jack, and/or CoJack cheese, grated

  4. 2 cups medium white sauce (recipe below)

  5. Salt and Pepper to taste (especially pepper)

  6. Cook macaroni according to package instructions. Drain and rinse.

  7. Add cheese to hot white sauce and stir until melted. Fold cheese

  8. sauce into macaroni. Serve immediately or pour mixture in baking

  9. dish and heat in oven (350:F), uncovered, for 20 minutes or until

  10. heated through.

  11. Medium White Sauce

  12. 2 tablespoons butter or margarine

  13. 2 tablespoons flour

  14. 2 cups milk, warmed

  15. Melt butter in saucepan over medium heat. Sprinkle flour into butter

  16. and stir until paste forms. Cook for 2 minutes. Add warmed milk to

  17. paste, stirring vigorously to mix. Cook sauce until thickened.

  18. Remove from heat.
