  1. 5 large potatoes -- baked or boiled

  2. 3 tablespoons ghee

  3. 1 tablespoon salt

  4. 1 dash black pepper

  5. 2 green chiles -- minced

  6. 3 tablespoons water or milk fresh parsley -- for garnish

  1. Preparation : Mash the potatoes sans their skins. Add all the ingredients. Use warmed water or milk. Whisk until creamy with a fork. Serve immediately or keep warm in a double broiler.
