  5. I made the sweet and sour vegetables last night and I reallyy liked them.

  6. My husband thought they were too sour, but I thought the sweet and sour

  7. mixture was just right. If it is too sour, you could cut out some of the

  8. vinegar. Can anyone guess as to how much fat is in this recipe? It did not

  9. give any information. Well, here is the recipe.

  10. Sweet and Sour Vegetables

  11. Servings: 6

  12. Preparation Time : 30 minutes

  13. Cooking Time: 15 minutes

  14. Serve over rice or other whole grains.

  15. 1 20 oz. can pineapple chunks in

  16. 1 cup sliced carrots

  17. their own juice 4 cups chopped broccoli

  18. 1 onion, cut in wedges

  19. 1 cup water

  20. 1 bunch scallions, cut into 2 cloves garlic, crushed

  21. 1 inch pieces 1 teaspoon grated fresh ginger

  22. 1 large green pepper, cut into 1 inch pieces Sauce

  23. 1 cup unsweetened pinapple

  24. 1/4 cup cider vinegar

  25. juice 2 1/2 tablespoons soy sauce

  26. 1/3 cup brown sugar

  27. 2 tablespoons cornstarch

  28. Drain the pineapple, reserve the juice and set aside.

  29. Place the vegetables, except the broccoli, in a large pot or wok with

  30. 1/2 cup of the water and the garlic and ginger. Saute for 5 minutes. Add

  31. the broccoli and the remaining 1/2 cup water. Stir, then cover and cook

  32. over low heat for 5 minutes.

  33. Combine the sauce ingredients in a separate bowl.

  34. Stir in the pineapple chunks and the sauce mixture. Cook, stirring until

  35. thickened.
