  1. Ingredients (serves 4)

  2. 250g packet microwave brown basmati rice

  3. Mediterranean salad (reserved from related recipe)

  4. 400g can chickpeas, drained, rinsed

  5. 2 x 185g cans tuna in springwater, drained

  6. 1 1/2 tablespoons lemon juice

  7. 1 1/2 tablespoons olive oil

  8. 8 slices crusty wholegrain bread

  1. Cook rice following packet directions. Place salad in a large bowl. Add chickpeas, tuna, rice, lemon juice and oil. Toss to combine. Serve with bread.
