  1. 1 tablespoon olive oil

  2. 1 medium onion, minced or pureed

  3. 1 tablespoon minced garlic

  4. 8 medium potatoes, peeled and sliced in about 1/8" slices water

  5. 1 knorr beef boullion cube freshly ground pepper to taste

  6. 1 lb of regular or lite polska kielbasa

  1. In either a deep cast iron or non-stick skillet, saute onion and garlic in the olive oil until translucent. Add sliced potatoes and brown lightly on both sides (you might have to add a little more olive oil). Add water to the skillet to almost cover the potatoes. Then crumble and stir in the boullion cube into the pan and add freshly ground black pepper to taste. Cut the polska kielbasa into 4 large pieces and place on top of the potatoes. Cover and allow to simmer for about 30 mins or until the potatoes are cooked through. Makes 4 servings.
