  1. 4 tablespoons olive oil

  2. 1 lemon, juice and zest of , finely grated

  3. 2 garlic cloves , finely chopped

  4. 2 teaspoons dried red chilies (or fresh if preferred)

  5. 12 boneless skinless chicken thighs , each cut into 4 pieces

  6. salt & fresh ground pepper

  1. Combine the oil, lemon juice and rind, garlic, chilli and seasoning in a shallow bowl.

  2. Add the chicken pieces and coat.

  3. Cover and refrigerate for at least 4 hours or overnight.

  4. Thread the chicken onto 8 oiled skewers and cook under a preheated grill (broiler) for 6-8 minutes, turning frequently.

  5. Delicious served with a mixed leaf salad with red capsicum added. I did not bother with a salad dressing as the chicken is so beautifully piquant.

  6. Prep time does not include marinade time of 4 hours.
