  1. 1 c Lentils

  2. 1 c Green peas, fresh or frozen

  3. 1 c Vegetable stock

  4. 1/4c Tomato paste

  5. 2 c Tomatoes, chopped

  6. 1 tb Sweet Hungarian paprika

  7. 1 ts Ground cumin

  8. 1 tb Berbere

  9. 1/4c Ghee

  10. 2 ea Garlic cloves, chopped

  11. 1 c Onions, chopped

  12. Salt & pepper

  1. + Rinse & cook lentils.

  2. when done, drain & set aside.

  3. Reserve stock for later in the recipe.

  4. Saute onions & garlic in the ghee till onions are just translucent.

  5. Add berbere, cumin & paprika.

  6. Saute for a few minutes longer, stirring occasionally to prevent anything from burning.

  7. Mix in tomatoes & tomato paste.

  8. Simmer 10 minutes.

  9. Add stock & continue simmering.

  10. When lentils are cooked, mix them into the saute.

  11. Add green peas & cook another 5 minutes.

  12. Add salt & pepper to taste.

  13. Serve with Injera bread or pita bread.
