  1. 2 8 oz trout -- (8 to 10)

  2. 4 tablespoons melted butter

  3. 1 lemon -- sliced

  4. 1 orange -- sliced salt and pepper -- to taste basil -- to taste thyme -- to taste shallots -- to taste

  5. 1/8 teaspoon paprika

  1. Preparation : Brush trout with melted butter. Season with salt, pepper, basil, thyme and shallots. Place lemon and orange slices on top in alternating pattern. Sprinkle with paprika. Steam over clear water for 7-10 minutes. UW Sea Grant Advisory Services
