  1. 4 tablespoons 60ml Virgin olive oil

  2. 1 tablespoon 15ml Red onion - thinly sliced (medium)

  3. 1 tablespoon 15ml Carrot - finely chopped (small)

  4. 1 Celery rib - thinly sliced

  5. 2 Garlic cloves - thinly sliced

  6. 1 teaspoon 5ml Crushed red chilies

  7. 1 cup 237ml Dry white wine

  8. 1 cup 237ml Basic Tomato Sauce - (see recipe)

  9. 2 cups 474ml Shucked fresh oysters - (abt 1 lb)

  10. 4 Peasant bread - (thk slices)

  11. 1/4 cup 36g / 1 1/3oz Finely-chopped Italian parsley Salt - to taste Freshly-ground black pepper - to taste

  1. Recipe Instructions In a large saute pan, heat olive oil. Add onion, carrot, celery, garlic, chilies and saute until light brown and very soft (about 10 to 12 minutes). Add wine and Basic Tomato Sauce, bring to a boil. Season with salt and pepper and remove from heat. Season oysters with salt and pepper and place into tomato sauce. Over medium heat, bring oysters and sauce to low boil and cook 1 minute. Toast bread on grill and place in 4 separate bowls. Add parsley to oysters, stir, add salt and pepper. Divide oysters and sauce over grilled bread and serve. This recipe yields 4 servings.
