  1. Concord Grape Pie

  2. 4 1/2 cups Concord grapes (2 pounds)

  3. 1 cup sugar

  4. 2 teaspoons lemon juice

  5. 1/8 teaspoon salt

  6. 1 unbaked pastry shell (9 inches)

  7. 1/2 cup quick-cooking oats

  8. 1/2 cup packed brown sugar

  9. 1/4 cup all-purpose flour

  10. 1/4 cup butter or margarine

  11. Squeeze the end of each grape opposite the stem to separate skins

  12. from pulp. Set skins aside. Place pulp in a medium saucepan; bring

  13. to a boil. Boil and stir for 1 minute. Press through a strainer

  14. or food mill to remove seeds. Combine pulp, skins, sugar, flour,

  15. lemon juice and salt; pour into pastry shell. Combine oats, brown

  16. sugar and flour; cut in butter until crumbly. Sprinkle over filling.

  17. 425F for 15 minutes.

  18. Remove foil; bake 20 minutes more or until golden brown. Cool on

  19. a wire rack. Yield: 8 servings.
