  1. 1 quantity Basic muffin mix (see related recipe)

  2. 4 x 55g Cherry Ripe chocolate bars, roughly chopped

  3. 100g glace cherries, chopped

  4. Chocolate sauce

  5. 100g good-quality dark chocolate

  6. 1/2 cup pouring cream

  1. Preheat oven to 180°C. Lightly grease a 12-hole, 1/3-cup capacity non-stick muffin pan.

  2. Follow step 2 for making Basic muffin mix (see related recipe), omitting coffee and adding Cherry Ripe and cherries to the flour.

  3. Follow step 3 for making Cappuccino muffins (see related recipe), reducing cooking time to 20 minutes.

  4. Make chocolate sauce: Place chocolate and cream in a heatproof, microwave-safe bowl. Microwave on medium (50%), stirring occasionally, for 2 minutes or until melted and smooth. Allow sauce to cool slightly. Drizzle over muffins and serve.
