  6. 1/2 c Chinese straw mushroom

  10. 1 pn Dry galanga

  11. 1 ea Green onion-cut into 1 pcs

  12. 1 ea Small fresh tomato cut up

  13. 2 ea To-

  14. 3 coriander leaves cut u

  15. 1 ea Fresh green chili pepper-sl

  16. 2 ts Fresh lemon juice

  17. 1 x Fish sauce or to taste

  18. 1/4 ts Ground red cayenne pepper

  19. 7 ea To-

  20. 8 fresh mint leaves

  21. Directions: In a med sauce pan, cook chicken in boiling water for 10

  22. minutes. Add lemon grass and galanga and cook 7-8 minutes longer. Add

  23. remaining ingredients EXCEPT for the mint leaves and lemon juice, and simmer on low heat about 15- 20 minutes. Remove from heat. Stir in

  24. lemon juice. Sprinkle with mint. Serve hot with rice.
