  1. (Large raw) mango 1

  2. Cut into large slices

  3. Sugar 1/2 kg.

  4. Water 2 cups

  5. Bay leaves 2

  6. Cinnamon 2 (1") piece

  7. Cumin seeds 1 tsp

  8. Garlic 10 cloves

  9. Peppercorns 1tsp

  10. Chilli powder 2 tsp.

  11. Raisins 1/2 cup

  12. Vinegar 2 tbsp.

  13. Salt 2 tsp.

  1. In a large sauce pan place the sugar and water and bring it to boil, and make one string syrup. Add all the ingredients and simmer, until the mango is cooked and the syrup is of jam consistency. Cool and store in sterilized jars.
