  1. Ingredients :Serves 4

  2. 1 tablespoon 2 cloves

  3. 1 3 125 g 2 tablespoons 2 tablespoons 150 ml Groundnut oil

  4. Garlic, crushed and finely chopped

  5. Shallot, finely chopped

  6. Small red chilies, finely chopped

  7. Crunchy peanut butter

  8. Palm sugar

  9. Vietnamese fish sauce

  10. Coconut milk, plus extra if necessary

  1. Heat the oil in a heavy based saucepan.

  2. Add the garlic, shallot, chilies and frygently for 2 minutes or until the shallots are softening.

  3. Add the peanut butter, sugar, fish sauceand coconut milk.

  4. Mix together thoroughly, then cook overlow heat for 10 - 15 minutes.

  5. Add more coconut milk if the sauce isbecoming too thick.
