  1. 100g or so canned cannellini bean s

  2. 100g or so canned borlotti bean s extra virgin olive oil

  3. 1 red onion or 2 shallots, peeled and finely sliced

  4. 4-6 anchovy fillets, finely chopped

  5. 1-2 fresh red chillies, deseeded and finely chopped sea salt and freshly ground black pepper

  6. 4 x 225g/8oz bluefin or yellowfin tuna steaks, about 1 inch thick zest and juice of

  7. 2 lemons

  8. 3 handfuls of mixed fresh herbs ( chives , chervil, basil, parsley, mint), roughly chopped

  1. Mix the chopped herbs, beans, red onion, anchovies, and chilies in a bowl, and dress with olive oil and lemon juice/zest. Pat the tuna steaks with olive oil, then salt/pepper, then grill over high heat to med rare. Either serve steak with topping of herb/bean mix or rip bits of tuna and serve over mound of herb/bean mix.
