    1. 2 Cornish game hens

    2. 12 cup 78ml Dry white wine

    3. 2 teaspoons 10ml Poultry seasoning

    4. 2 teaspoons 10ml Lemon juice

    5. 1 teaspoon 5ml Low sodium soy sauce

    6. 1/2 teaspoon 2 1/2ml Ground green or white peppercorns

    7. 2 Sprigs fresh parsley

    1. Wash hens and pat dry. Mix marinade ingredients. Brush hens inside and out, reserving the extra marinade for basting. Refrigerate hens for 2 hours. Preheat oven to 400 F. Place a sprig of parsley in the cavity of each hen. Place on roasting rack in shallow pan. Roast for 15 minutes at 400 F. Reduce heat to 350 F and roast for 1 hour. Baste with reserved marinade frequently (every 10 - 12 minutes).
