  1. 8 sl Bacon, finely diced

  2. 1 sm Onion, finely diced

  3. 1 1/2c Spinach, cooked and -well-drained

  4. 1 pn Of salt and white pepper

  5. 1 Shake tabasco

  6. 1/2c Parmesan cheese, grated

  7. 1/4c Flour

  8. 1/2c Heavy cream

  1. + Directions : Saute bacon in heavy sauce pan until crisp. Reduce heat and stir in onions. When onions are soft add spinach, stir till thoroughly hot. Blend in next four ingredients; when hot add cream. Cook another 2 minutes, pour in a shallow dish to cool. Makes 2 cups. This mix is a good topping for oysters, chicken and veal.
