  1. Bourbon Marinade

  2. 1 carrot, sliced

  3. 1 onion, sliced

  4. 1 clove garlic, minced

  5. 4 sprigs parsley

  6. 1 tb black peppercorns, cracked

  7. 1 bay leaf

  8. 2 c white wine (dry)

  9. 1/2 c vinegar

  10. 4 c water

  11. 1/4 c Wild Turkey bourbon

  12. Mix all ingredients in a large glass or earthenware bowl until well

  13. blended. Add meat to marinade. Refrigerate for 8 hours or overnight,

  14. turning 4 times.

  15. (Makes 6-1/2 to 7 cups)

  16. This makes enough to marinate 6-7 lbs of any big or small game

  17. meat.
