  1. 1 1/2 lbs 681g / 24oz Albacore tuna fillets - rinsed, and Patted dry

  2. 1 Lemon - juiced

  3. 2 Green onions - chopped

  4. 2 tablespoons 30ml Chopped fresh parsley

  5. 1 tablespoon 15ml Sweet relish

  6. 1/3 cup 48g / 1.7oz Dried bread crumbs

  7. 2 Eggs

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. Vegetable oil

  1. Finely chop the tuna with a chef's knife. Place tuna in a bowl and mix in lemon, onion, parsley, relish, bread crumbs and eggs until well combined. Season with salt and pepper.

  2. Shape tuna mixture into 6 round patties. Brush both sides of tuna burgers with vegetable oil and season again with salt and pepper.

  3. Cook the tuna burgers in a non-stick skillet over medium heat for 5 minutes each side until they are cooked through.

  4. Serve on hamburger buns with whatever you fancy. Some suggestions are cheese, lettuce, tomato, pickles, mustard, ketchup and barbecue sauce.
