  5. 1/4 Cup all purpose flour

  6. 1/2 Teaspoon ground cinnamon Maple syrup or Confectioners' sugar

  1. Peel, core, and thinly slice the apples. In an 8-inch sauté pan, melt 1 tablespoon of the butter over medium heat until it begins to bubble. Spread half the apple slices evenly on the bottom of the pan, reduce heat to medium, and cook for 2 to 3 minutes, or until they begin to wilt. Meanwhile, in a bowl, whisk together the egg mixture over the apple slices, cover the pan and cook for 2 to 3 minutes, or until the pancakes begin to set up and the sides look dry. Using a flexible spatula flip the pancake over. Cook for another minute, and then slide onto an oven-safe plate and keep warm in the oven while you make the next second pancake. Serve with syrup and/or confectioners’ sugar.
