  2. 10 medium baking potatoes

  3. 1/2 cup butter

  4. 1 medium onion -- chopped

  5. 1 large green bell pepper --

  6. chopped 1 medium red bell pepper -- chopped

  7. 3 ounces tasso -- diced

  8. 1/2 pound andouille or smoked sausage

  9. diced 1 pound small shrimp -- (cooked) --

  10. chopped 1/2 cup butter -- melted

  11. 12 ounces cream cheese -- cubed

  12. 1 pound crab meat

  13. salt to taste

  14. pepper to taste

  15. 2 cups green onions -- chopped

  16. 1/2 pound cheddar cheese -- grated

  1. Bake potatoes, and scoop out insides, reserving skins. Mash potatoes, and set aside. Melt 1/2 cup buttter, and saute onion and bell peppers untillimp. Add tasso and andouille; cook 4 minutes, Add shrimp: cook lightly. Add 1/2 cup butter and cream cheese: cook until cream cheese melts. Remove from heat. Stir in crabmeat and mashed potatoes. Mix well, and add salt and pepper, if needed. If consistency is too heavy, add more melted butter. Stuff mixture back into potato skins, and top with green onions and Cheddar cheese... Bake until hot.
