  1. Bolivian Peanut Chicken

  2. 1 lb boneless, skinless chicken, sliced

  3. 1 Tbsp vegetable oil

  4. 1 large onion, sliced

  5. 1 red pepper, sliced

  6. 3 cloves garlic, minced

  7. 1/2 tsp hot pepper sauce

  8. 3/4 cup chicken stock

  9. 1/3 cup peanut butter

  10. Heat oil in a large skillet over medium heat. Add chicken and stir

  11. cook for 3-4 minutes until the chicken is no longer pink. Remove

  12. from skillet and set aside. Add onion, red pepper and garlic to

  13. skillet and stir cook until onions are tender, Add hot pepper sauce,

  14. chicken stock and peanut butter. Bring to a boil, stirring to

  15. blend in the peanut butter. Reduce heat and simmer for 10 minutes.

  16. Add chicken back to skillet and continue simmering until sauce is

  17. slightly thickened. Serve over white rice. Makes 4 servings.
