  1. 2 fillets kangaroo

  2. salsa

  3. 1 zucchini

  4. 1 Spanish onion

  5. 1 Granny Smith apple

  6. 1 green pear

  7. native slender mint or Vietnamese mint

  8. Salsa Dressing:

  9. cup of oyster sauce

  10. cup lime juice

  11. cup rice vinegar

  12. 1 cup brown sugar

  13. cup fish sauce

  1. Dice all ingredients 1cm squares and add together Simmer salsa-dressing ingredients for 10 minutes, stirring and reducing by one third.

  2. Chargrill kangaroo fillet rare- turning only once.

  3. Place fillet on bed of Rocket. Add salsa and dressing liberally and carefully for presentation.
