  1. 2 Ripe plum tomatoes

  2. 2 cups 80g / 2.8oz Tightly packed torn curly leaf lettuce

  3. 2 tablespoons 30ml Fresh basil leaves

  4. 1 tablespoon 15ml Fresh basil - chopped

  5. 1 tablespoon 15ml Fresh lime juice

  6. 1 tablespoon 15ml Honey

  7. 1/2 teaspoon 2 1/2ml Olive oil

  8. 1/8 teaspoon 0.6ml Salt

  1. Cut each tomato in half lengthwise; push seeds out with thumbs.

  2. Cut each half into thin strips.

  3. Place in a large bowl; add lettuce and basil leaves, and set aside.

  4. Combine chopped basil and next 4 ingredients in a jar; cover tightly, and shake vigorously.

  5. Pour over lettuce mixture; toss gently.
