  2. MUSHROOM AND KIDNEY SOUP

  6. 1 Ox kidney

  7. 2 qt Stock

  8. 1 oz Flour

  9. 1 oz Dripping

  10. 1 lg Onion

  11. 1 t Salt

  12. 1 t Mustard

  13. 1 t Sugar

  14. 1 tb Rice

  15. A sprinkle of pepper

  16. 1/2 lb Mushrooms

  17. Soak the kndney in warm salted water for 30 mins.

  18. Wash the mushrooms, peel and cut into pieces, chop the

  19. stalks finely. Cut the kidney into small pieces,

  20. removing the hard core and fat. Peel and chop the

  21. onion. Heat the fat in a big saucepan and fry the

  22. onion and kidney and mushrooms for five mins, turning

  23. to cook evenly. Push to one side and stir in the

  24. flour and seasonings, then stir in half the stock and stir until it boils.

  25. Cover and simmer gently for 3/4 hour, then add the

  26. well washed rice and remainder of stock. Continue to

  27. simmer gently for 12-15 mins more or until rice is

  28. tender. Skim if necessary and serve.
