  1. 2 cups peeled, cubed potatoes.

  2. 1 lg carrot, sliced.

  3. 2 celery ribs, chopped.

  4. 3 cups water.

  5. 2 cups cooked, chopped leftover ham.

  6. 2 tbsp chopped green bell pepper.

  7. 2 tsp finely chopped onion.

  8. 7 tbsp butter, divided.

  9. 3 tbsp flour.

  10. 1-1/2 cups 1% milk.

  11. 3/4 tsp salt.

  12. 1/8 tsp pepper.

  13. 1 cup reduced-fat, shredded cheddar cheese.

  14. 1/2 cup bread crumbs, plain or flavored

  1. In lg saucepan , bring potatoes, carrots, celery and water to a boil. Cook 15 min, or until potatoes are tender. Drain. In lg skillet, saute the ham, green pepper, and onion in 3 tbsp butter until tender. Add to the potato mix. Spray a 1-1/2-quart baking dish w/ cooking spray. Transfer potato mix to baking dish. In saucepan, melt remaining butter. Stir in flour until smooth. Gradually whisk in milk, salt and pepper. Bring to boil, cook 2 min or until thickened. reduce heat, add cheese. Stir until melted. Pour mix over Ingredients in baking dish. Sprinkle w/ bread crumbs. Bak, uncovered at 375 for about 30 min, or until heated through.
