  1. 2 pounds Smoked sausage,

  2. 1" pieces

  3. 3 cans Black beans (15 oz.) drained

  4. 1 1/2 cup Chopped onions

  5. 1 1/2 cup Chopped green pepper

  6. 1 1/2 cup Chopped celery

  7. 4 eaches Cloves garlic, chopped

  8. 2 teaspoons Leaf thyme

  9. 1 1/2 teaspoon Leaf oregano

  10. 1 1/2 teaspoon White pepper

  11. 1/4 teaspoon Black pepper

  12. 1/4 teaspoon Cayenne pepper

  13. 1 each Chicken bouillon cube

  14. 5 eaches Bay leaves

  15. 8 ounces Tomato sauce

  16. 1 cup Water

  1. Brown sausage in a skillet over medium heat. Drain fat and transfer to crock-pot. Combine remaining ingredients in crock-pot. Cover and cook on low 8 hours or high 4 hours. Remove bay leaves. Serve over cooked rice.
