  1. 4 Bacon

  2. 1 Onion - chopped

  3. 1/4 cup 36g / 1 1/3oz Chopped green pepper

  4. 1 cup 110g / 3.9oz Chopped celery

  5. 1 tablespoon 15ml Chopped parsley

  6. 2 cups 125g / 4.4oz Chopped fresh or canned tomatoes

  7. 4 cups 948ml Fish stock

  8. 2 cups 474ml Seafood - shrimp, crab,

  9. And/or fish fillets

  10. 2 cups 474ml Sliced okra in rounds

  11. 1 cup 160g / 5.6oz Cooked rice

  1. Fry the bacon til crisp, then remove and reserve. Add the onion, pepper, and celery to the bacon fat and saute until yellow. Add the parsley, tomatoes, and stock, and cook until all the vegetables are tender. Stir in the seafood, the okra, and the rice. Cook for 10 minutes, until the fish is just cooked.

  2. When ready to serve, ladle into bowls and top with the reserved bacon, crumbled.
