  1. Roast Beef

  2. 4 lb beef roast(boneless)

  3. 1 t Beaumonde seasoning

  4. 1/2 ts lemon pepper

  5. 2 tb vegetable oil

  6. 1 can tomato sauce (15-oz)

  7. 2 medium onions, sliced

  8. 1 1/2 c sliced celery

  9. 1/2 ts garlic powder

  10. 1 t sugar

  11. 4 carrots, quartered

  12. 2 medium potatoes, quartered (scrubbed and unpeeled)

  13. 1 c dry wine

  14. Sprinkle roast with salt and pepper (or Beau Monde). In dutch oven,

  15. brown roast in hot oil, drain. Add remaining ingredients, except

  16. carrots and potatoes. Simmer, covered, 1 1/2 hours. Add vegetables,

  17. cover, and simmer 1 hour longer. When I feel lazy, I simply spray

  18. the crockpot with non-stick cooking spray (ie., Pam), omit the oil,

  19. add the roast, and then mix the remainder of the ingredients with

  20. a little wine, pour it over the roast, and let it cook on LOW for about 6 hours.
