  1. 1 cup chopped onion

  2. 1 cup chopped celery

  3. 1/4 cup butter or margarine

  4. 2 cups chicken broth

  5. 2 cups beef broth

  6. 1 teaspoon baking soda

  7. 1/4 cup cornstarch

  8. 1/4 cup water

  9. 1 1/2 cups sauerkraut -- rinsed and drained

  10. 4 cups milk

  11. 4 cups chopped, cooked corned beef

  12. 2 cups shredded Swiss cheese

  13. salt and pepper -- to taste Rye croutons -- optional

  14. 4 to 5 hours. Stir in cheese and cook

  15. 30 minutes. Season with salt and pepper. Serve. Garnish with croutons

  16. if de sired. Serves 12.
