  3. 1/3 cup Dijon mustard

  4. 1 1/2 tsp. dried thyme, crushed

  5. 1 tsp. dried rosemary, crushed

  6. 1 tsp. coarse grind black pepper

  7. 1 tsp. garlic powder

  8. 1/2 tsp. seasoned salt

  1. Preheat the oven to 325 degrees. Spread the mustard all over the roast. Place the roast, fat side up, on a rack in a roasting pan. Stir together the thyme, rosemary, pepper, garlic powder and seasoned salt in a small bowl. Sprinkle the herb mixture over the top and sides of the roast, pressing lightly to adhere. Roast about 60 minutes until the internal temperature reaches 160 degrees. Tent the roast with foil and let stand 15 minutes before slicing and serving.
