  1. 1 c Cooked rice; cooled

  2. - (cooked in chicken broth) 1/2 c Chopped fresh tomatoes

  3. 2 Jalapeno peppers; minced

  4. 2 tb Red wine vinegar

  5. 1 tb Vegetable oil

  6. 1 ts Snipped fresh cilantro

  7. -OR- parsley 1 Garlic clove; minced

  8. 1/2 ts Basil

  9. 1/4 ts Crushed thyme

  10. 2 to 3 hours so flavors will blend. Stir before serving. Each serving provides:

  13. 6.8 g. fat

  14. 23 1/2 g. carbohydrate
