  1. 2 lbs 908g / 32oz White fish fillets

  2. 1 1/2 cups 355ml Lime juice

  3. 1 lb 454g / 16oz Tomatoes chopped

  4. 2 lbs 908g / 32oz Onions - chopped (small)

  5. 2/3 cup 97g / 3.4oz Chopped olives

  6. 4 Serrano or jalapeno chiles fresh, chopped

  7. 1 cup 237ml Catsup

  8. 1 cup 237ml White wine

  9. 3 tablespoons 45ml Chopped cilantro Salt Pepper

  1. Recipe Instructions Chop fish into 1/2-inch pieces, and marinate in lime juice. Overnight is best, but at least 3 or 4 hours until it turns white. Remove fish from the lime juice. Mix all of the ingredients together and refrigerate for an hour. Serve with crackers on a bed of lettuce. Notes: A modern, Acapulcan style Ceviche of fish, Ceviche estilo Acapulco.
