  1. 4 cup(s) apples , sliced

  2. 2 cup(s) granulated sugar

  3. 2 cup(s) all-purpose flour

  4. 1 1/2 teaspoon(s) baking soda

  5. 2 teaspoon(s) vanilla extract

  6. 1 teaspoon(s) ground cinnamon

  7. 1 teaspoon(s) salt

  8. 2 large eggs

  9. 1/4 cup(s) vegetable oil

  10. 1/2 cup(s) apple sauce , unsweetened

  11. 2 teaspoon(s) vanilla

  12. 1 cup(s) chopped pecans , optional

  1. Preheat oven to 350 degrees F. Grease a 9x13 pan with cooking spray and set aside.

  2. In a large bowl, stir together apples and sugar. Add dry ingredients in order of list and stir well. In a separate bowl, beat together eggs, oil, apple sauce, and vanilla.

  3. Stir egg mixture into apple mixture, blending until thoroughly moistened. Stir in pecans, and then pour into your pan.

  4. Bake for 50 minutes or until cake springs back when lightly pressed. Cool and then either serve plain or top with your favorite icing.
